In the spirit of gratitude and togetherness, Thanksgiving always holds a special place in my heart. Beyond the delectable feasts and cherished traditions, this holiday serves as a poignant reminder to reflect on the blessings that enrich our lives. While this Thanksgiving was different for us, as our usual trip to Florida was replaced with a colder adventure embracing the slopes of Canyons, playing turkeys in the snow, and hosting close friends who have become like family, it was indeed a Thanksgiving to remember. While it may not have involved the usual sandy shores, it was filled with the joy of shared moments and the warmth of newfound traditions. As we reflect on these special times, let’s continue to embrace the spirit of Thanksgiving, celebrating not only the abundance on our plates but also the richness of the bonds that make this season truly meaningful. Aubergine Kitchen in Kimball Junction puts a healthy twist on some of our favorite meat and vegetable meals. The Aubergine menu features flavors from around the world, made with only whole ingredients—unprocessed and unrefined—to help everyone eat better, and feel different. Some current menu favorites include the chicken harvest bowl, the spicy coconut curry bowl, and the Mediterranean bowl.
